Aim of the role:
To ensure that all food preparation and dishes are made to the standard laid by the Company.
Responsabilities:
1. Daily production for all items of chocolate
2. Responsible for management of a team of 1 or 2 people (if required)
3. Assist in organization of laboratory, including organization and cleanliness of dried storage, walk-ins, and fridges 3. Daily quality checks of products
4. Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely.
5. Maintain and strictly abide by state sanitation/health regulations and Company requirements.
6. Meet with the Executive Chef/Sous Chef to review assignments, changes andother information pertinent to the job performance.
7. Complete Opening Duties:
a) Inspect the cleanliness and working conditions of all tools, equipment and supplies.
b) Inform the Executive Chef/Sous Chef of any supplies that need to be requisitioned.
c) Check production schedule and par. d) Establish priority items for the day. 8. Inform the Executive Chef/Sous Chef of any foreseeable shortages before itemsrun out.
9. Minimize waste and maintain controls to attain forecasted food cost
Qualification Requirements:
1. With only pastry department experience (no cooks or waiters)
2. A genuine passion and knowledge for food and pastries.
3. 2 years minimum experience in hotel***** with skills in chocolate field
4. 2 years minimum experience in chocolate production (bon bon, pralines, bars)
5. Must be meticulously clean and aware of all food safety standards 6. Sociable and friendly to staff. We believe personality is your biggest asset.
7. Dependable and hard-working.
