Key Performance Elements/Essential Functions:
 Adhere to staffing guide outlines
 Approve all schedules within culinary operations
 Ensure that all standard recipes and presentations are being followed
 Daily checking of food in all areas to ensure consistency and quality
 To be in the areas of service during mealtimes and banquets, monitoring kitchen operations and service
 Hold regular meetings with department heads
 Perform on the job, "shoulder to shoulder" training
 Maintain related budget control on daily, weekly, monthly and yearly basis
 Be up to date on all related financial matters
 Maintains hygiene and sanitation to an exceptionally high level at all times
 Co-ordinate new and revised menus
 Ensures pest controls are in place and working at all times
 Executes training programs to maintain the interest of the staff and improve the knowledge
and productivity
 Maintains a healthy communication link with all departments and corporate office.
Essential Competencies:
 Ability to manage multiple kitchen and food operations
 Possess a thorough knowledge of required materials, methods, and equipment
 Ability to train and develop subordinates
 Possess considerable knowledge of food preparation and food service management ,methods, and techniques
 Attention to detail
 Possess knowledge of food values, nutrition, and menu planning, and uses for leftover food
 Ability to plan and modify menus to meet various requirements
 Ability to control and manage restaurant and retail food service operations
 Possess knowledge of all known health hazards in food preparation and service, and of necessary precautionary measure
 Ability to manage inventory and keep records of foodstuffs used
 Ability to supervise the work of others
 Ability to prepare and understand working schedules
 Ability to maintain a variety of records and to prepare reports
 Skilled in kitchen operations and delivering a consistently high quality product
Qualifications, (Executive Chef – Twist)
 Minimum 10 years kitchen experience and at least 4 years in Executive Sous or Head Chef capacity
 Background in food service multi-unit retail organization with beverage experience
 Fluent in English with Local languages being an advantage
 Previous multi-department management experience
 Culinary degree and or equivalent required
 Experience in Fast Food / Fast Casual essential
 Experienced in international cuisine, with a comprehensive understanding of differenttechniques used in different ethnic cuisine groups as well as experience and understanding
of the highest quality in each cuisine type
 Has demonstrated the professional skill set to work cross functionally with highly effective
outcomes
 Ability to work well under pressure
 Excellent verbal/written skills; well developed analytical skills
 Strong ability to plan, delegate and communicate
 Well organized and detail oriented; proven leadership skills
 Proficiency in Microsoft Office – Word, Excel and PowerPoint
