Qualifications:
- Must hold BSc degree in Food Safety or related field Bachelor Degree from an accredited College or University in Public Health/ Environmental Health or Restaurant/ Hotel Management or hold a HACCP and Food Safety Internal Auditor certification or other relevant certified qualifications in the field of Hygiene and Sanitation or extensive Industry Experience in the field of Food Processing Food Safety
- At least five (5) years industry experience, with an established record of job-related continuing education in the field of Food Safety and Sanitation or food manufacturing environment.
- Must have full knowledge of food safety, quality systems, FSMS (ISO 22000:2005), HACCP and other regulatory compliance or programs, including food security.
- Excellent written English skills.
- In-depth knowledge of relevant Health and Hygiene regulations.
- Proficiency in IT, especially MS Office
Task Description:
- Monitors compliance of operational work flows in accordance to Food Safety Management System (FSMS) and performing other quality assurance activities.
- Oversees the safe food service operation, including preparation, cooking, filling, chilling, packing, dating, boxing and serving, including label verification. Inspecting of raw materials and production quality.
- Conducts daily routine inspection in accordance to Hazard Analysis and Critical Control Points (HACCP), Service Quality Management (SQM), Standard Operating Procedures (SOP), Integrated Pest Management (IPM), Control of Substances Hazardous to Health (COSHH) and Operational Health and Safety (OHS) standards.
- Ensures continuous improvement of FSMS, HACCP, SQM, IPM, COSHH and OHS systems, policies and standard operations procedures in conformance with international standard and best practice.
- Reviews, updates and monitors Environment Protection Program (EPP) and Food Waste Prevention Program (FWPP) for the food service operation, inclusive of procurement recommendation, recycling and conservational aspects.
- Reviews, updates and implements food operation related procedures and training programs, with defined key performance indicators.
- Develops and monitors regular reporting and logging standards, including immediate corrective action reporting in case of interruption and malfunctions and maintenance of equipment and time - temperature reporting.
- Demonstrates presence during operation and performing administrative work.
- Conducts training classes and courses on Sanitation & Hygiene and other food related operational topics.
- Conducts regular internal audits and facilitating and assisting during external inspections ensuring best possible inspection results at all times.
- Administrates catering staff Health Procedures and recording keeping.
